Crockpot Recipes: Caramelized Onions (and French Onion Soup)

Caramelized Onions in the Crockpot

I love caramelized onions, but I really don’t like how long they take to make. And then there seems like there is that narrow window where the onions that I’ve worked so hard to bring to a luscious, golden brown goodness suddenly turn to shriveled, lifeless remnants of their former selves. Ok, maybe that’s a little dramatic, but they are a lot of work and way too easy to screw up. However, the ARE delicious, versatile, and freezer-friendly, so I figure I would see if they would fly in the crockpot.

Ingredients for Caramelized Onions

  • 4 large yellow onions (preferably NOT sweet onions)
  • 1-2 cloves of garlic (optional)
  • 2 T. sugar

Roughly chopped onions

Roughly chop your onions, so that you end up with long pieces. Put everything into a large crockpot and add in sugar. Toss to coat the onions with the sugar. Cook on low for 8-10 hours. The onions should be golden brown. If you use sweet onions, you will end up with alot of water. You will need to leave the lid off for a couple hours in the beginning to get rid of excess liquid or your onions won’t completely caramelize.

Caramelized Onions

At this point, you could be done. You could let your onions cool off, then partition them off into freezer bags or containers to use later. I decided to go ahead an make some French Onion soup because…well, it’s amazing and I love it!

Ingredients for French Onion soup

  • caramelized onions (from 3-4 onions)
  • 6 cups of beef broth
  • salt and pepper to taste
  • 1 T. thyme
  • 1 bay leaf
  • 1/2 cup mozzarella cheese
  • 1/2 parmesan cheese
  • 1/2 Gruyere cheese
  • French bread

Put all of the ingredients together in the crockpot. Cook on high for 3 hours. Ideally, you would ladle your soup into oven safe bowl top with a slice of French bread and the mixture of cheese, and broil for 3-5 minutes or until the cheese is bubbly and brown. In a pinch (or if, like me, you don’t have oven safe bowls), you can just use the microwave to melt you cheese. Your bread won’t be as crisp and your cheese won’t be as bubbly, but it will still taste pretty awesome.
