Lasagna is one of those things that I think about making, and then I think, “I don’t have time for that”. Recently, I found a fantastic way to make lasagna in half the time it usually takes. Lasagna roll-ups! These are so easy that you will make them part of your regular menu plan. They were so fun to make, I even got the Kindergartener in on the action! He was rolling noodles like a pro!
- 1 package of lasagna noodles, cooked, drained and rinsed (so they don’t stick together!)
- 32 oz cottage cheese or ricotta cheese
- 3 cups shredded mozzarella cheese
- 1 cup of parmesan cheese
- 1 T. dried parsley
- large jar of spaghetti sauce
Preheat the oven to 375 degrees. Start by boiling the lasagna noodles according to the package directions. Then, mix together the cottage cheese, 2 cups of the mozzerella cheese, the parmesan cheese and the parsley. Cover the bottom of a 9X13 casserole dish with half of the spaghetti sauce. Drain and rinse the noodles. Spoon a generous amount of filling onto the end of one noodle and roll tightly. Repeat with the rest of the noodles until the pan is full or you run out of noodles! Pour the remainder of the sauce over the top of the rolls. Sprinkle with the remainder of the mozzarella cheese. Cover with foil and bake for about 30-40 minutes. Uncover for the last 10 minutes to brown the cheese. Enjoy!!
